Things have been crazy. First just before Christmas, I get sick, my job was ending and I was miserable already… unfortunately, I was unable to work during the final week and missed getting to say good bye and good luck to the kids. 🙁 Then just as I’m recovering, my poor husband ends up with the nastiness. Luckily though, it appears neither of us had the dreaded COVID.
So now, comes the rest… My job officially ended January 1, 2022… I’ve been actively seeking jobs and wouldn’t you guess… education jobs are pretty sparse in our area… but I’m keeping up the hunt and hoping that something that will utilize my skills and experience will come along soon! Fingers crossed.
But — none of that is why you are here right!? So as you can imagine being a creative cook during this not so fun time was a challenge but I did come up with a few things to share. Enjoy! If you try any of these or have questions, please let me know! I want to get your feedback!
First… Upside down Corn-dog Pie
1 box Jiffy cornbread mix
water (follow what is needed on box)
1/4 cup chopped jalapeno – I used pickled but you could use fresh 🙂
1/4 cup Parmesan
1/4 cup cheddar or American cheese
1 lb smoked kielbasa (sliced into 1 inch chunks)
I used a cast iron skillet, you are welcome to use any oven safe pan, but the skillet brings out the yummy-ness!
Put it together… Jiffy mix, water, jalapeno and Parmesan in the bowl, mix well.
Layer sausage in pan, add cheese, then pour cornbread mix on top. Bake at 350 for about 15 minutes. I flipped mine onto a platter to show the sausage! 🙂 Enjoy. I will likely revamp this one to make strictly from scratch but when you have a little convenience, take advantage! 🙂
