Happy Snowy Saturday!

So its been a snowy week of job hunting, job hunting… job hunting! I have made a lot of leftovers this week… hence the limit of recipes coming in… lol… Really its more like by the time I’ve spent 3-4 hours scouring the local districts and job boards for possible jobs… I’m over being on the computer. But I promised on Facebook that I’d post a couple… So up first… Mango Marinated Chicken Thighs with Jasmine Rice…

Ingredients:

1 pound chicken thighs (yes, you can change this… I prefer thighs for this recipe)

1 mango

1 orange

1 shot tequila (you can skip or use wine)

1 green pepper

1 c jasmine rice

1 1/2 c chicken broth

1 tbs avocado oil

1 tsp red pepper flakes

1 tsp each: granulated onion and garlic

Preparation:

1 hour -24 hours before:

blend mango, orange, tequila, avocado oil, garlic and onion in blender.  In glass bowl place chicken and cover with mixture. Make sure all of chicken is covered.

Rice: bring broth to boil, add rice (follow directions on package)

When ready to cook – chop green pepper, cut chicken into bite sized pieces and sauté. Add marinade after chicken start to brown. Cook well. Before serving… add rice to pan and mix well.  Bon Appetite!

I have to share this…  I have started a small collection of old cookbooks. I’ve read a lot of recipes that honestly scare me! LOL. PLEASE DO NOT USE THIS RECIPE… it merely to illustrate and to share with you. I repeat… DO NOT USE THIS…

Cure for a Weak Back (from Housekeeping in Old Virginia, copyright 1879.)

2 tablespoonfuls finely powdered rosin

4 tablespoonfuls white sugar

2 egg whites

1 quart best whiskey

Dose, a tablespoonful three times day. Also claims to be good for colds, weak lungs and stopping an irritating cough. By the way… rosin is used to make soaps, varnishes, sealing wax, printing inks, adhesives, binders, soldering fluxes, gloss oils for paints, and pitch for casks. Yeah, don’t think that should be ingested!
