First, I want to thank all of you for your patience! I know I've been promising/threatening to do this for a long time now!

This isn't something that I'd say I'm totally adept at but I'm giving it a try.

The plan is that all those lovely pictures of meals will now have a place along with the recipes to go with them! Things have been crazy since the pandemic hit, I know we aren't alone in that one, but it made me sidetrack my goals and thoughts.

So, now as my position at Campagna is being eliminated, its again time to reevaluate and see what's next at Casa de Hickey.

I will likely share more than just recipes - hence the name... Cook Eat Teach Yarn...

Cook Eat Teach Yarn
Hi y'all... i know its been a while but wanted to share an experiment that came out GREAT!BAKED POLENTA!!!!INGREDIENTS: 3/4c polenta4c COLD broth or water, or milk (your choice)1 tsp each: dried oregano, basil 1/2stick of butter1/2 tsp each: onion and garlic powder1/2c cheese of your choicePreheat oven to 400FGrease a high walled casserole pan (I used a 10 inch round because it was handy)Put everything (except cheese) in the pan and give a little stir...bake uncovered for 60 minutes. Remove give it another gentle stir... add cheese... another gentle stir... if it feels like mashed potatoes its good to serve, if its too thick add a little liquidbut DO NOT OVER STIR.
